Recipe Monday: Cinnamon & Apple Pancakes (no sugar added)

Happy Monday everyone, I hope everyone had a great weekend! We spent ours swimming and eating ice cream. We live in Montreal, so we are hanging on tightly to these last hot summer days before the cool winds of Fall blow in. So after a treat-yourself weekend, I decided to make a batch of healthy pancakes for Bodhi's breakfast this morning.

This recipe is super simple and what I love the most about it is that this batter base works so well with other fruit and isn't just limited to apples. For example, you can swap out the grated apple for one mashed banana, or a handful of muddled raspberries, etc. So, without further ado, here it is: 

Cinnamon & Apple Pancakes (no sugar added)

1 cup flour of your choice (we used whole wheat) 
1 generous pinch of cinnamon
2 tsp baking powder
3/4 milk of choice (we used 3.25%)
1 egg
1 peeled & grated apple

Mix everything together, grease a skillet with butter, coconut oil or whatever else you have handy, dollop a large spoonful of batter onto the pan and flip it when bubbles break the surface (around 45 seconds on medium-low heat)

I topped Bodhi's pancakes with vanilla yogurt for some added moisture and a handful of blueberries because she's berry-obsessed!
